Chocolate Orange Cheesecake

🧁 Ingredients

Biscuit Base

  • 225g digestive biscuits
  • 100g unsalted butter (melted)

Cheesecake Filling

  • 450g full-fat soft cream cheese
  • 150g icing sugar
  • 1 tsp vanilla extract
  • 400g double cream
  • 200g orange-flavoured chocolate eggs (crushed)
    (pop them in a freezer bag, close, and give them a bash with the back of a large spoon!)

Decoration

  • 150ml double cream
  • 2 tbsp icing sugar
  • Melted chocolate orange (or plain chocolate works just as well)
  • Chocolate orange flavoured eggs

👩🍳 Instructions

1. Biscuit Base

  • Blitz the digestive biscuits in a food processor until fine crumbs.
  • Mix with the melted butter until fully combined.
  • Line a 20cm round tin with baking paper.
  • Press the biscuit mixture firmly into the base using the back of a spoon.
  • Chill in the fridge while you prepare the filling.

2. Cheesecake Filling

  • In a large bowl, whisk together the cream cheese, icing sugar, and vanilla extract until smooth.
  • In a separate bowl, whip the double cream to stiff peaks, then gently fold into the mixture.
  • Fold through the crushed orange chocolate flavoured eggs.
  • Spoon the mixture onto the biscuit base and smooth the top.
  • Chill in the fridge for at least 6 hours (or overnight) until fully set.

3. Decoration

  • Carefully remove the cheesecake from the tin.
  • Whip the double cream with icing sugar until thick.
  • Pipe or spread onto the cheesecake.
  • Finish with a drizzle of melted chocolate and chocolate orange flavoured eggs 🍊✨

💡 Notes

  • Store in the fridge for up to 4 days
  • Add a little orange zest for an extra citrus boost
  • Perfect as a showstopper dessert or celebration cake
