🍊 Valencian Orange Cupcakes 🍊

Light, zesty and full of fresh citrus flavour – these cupcakes are a perfect treat for any occasion.

🧁 Ingredients (Makes 12 cupcakes)

  • 6oz self-raising flour
  • 6oz caster sugar
  • 6oz butter or margarine
  • 3 eggs
  • 1 tbsp milk
  • Orange flavouring or fresh orange zest

🧁 Method

  1. Preheat your oven to 180°C (160°C fan) and line a cupcake tray with 12 cases.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Gradually add the eggs one at a time, mixing well after each addition. Add a spoonful of flour with each egg to prevent curdling.
  4. Fold in the remaining flour gently.
  5. Add the milk and orange flavouring or zest, mixing until smooth.
  6. Using a soft ice cream scoop, divide the mixture evenly into the cupcake cases.
  7. Bake for approximately 18 minutes, or until golden and springy to the touch.
  8. Leave to cool completely before decorating.

🍊 Orange Buttercream Icing

  • 125g unsalted butter
  • 125g icing sugar
  • A few drops of orange flavouring

Method:
Whisk the butter and icing sugar together until pale, light and fluffy. Add the orange flavouring and mix until smooth. Pipe on top of the cooled cupcakes.
