Caramelised Spiced Biscuits & Spread Brownies

Rich, chocolatey brownies packed with caramelised spiced biscuits, chocolate chips and generous swirls of biscuit spread. Gooey, indulgent and absolutely delicious!

Ingredients

  • 100g milk chocolate
  • 100g dark chocolate
  • 200g unsalted butter
  • 4 medium eggs
  • 270g light brown sugar
  • 100g plain flour
  • 40g cocoa powder
  • 180g milk chocolate chips – or white chocolate chips if you prefer
  • 150g caramelised spiced biscuits, roughly chopped
  • 180g caramelised biscuit spread

Method

  1. Preheat the oven to 180°C / 160°C fan. Line a 9-inch x 9-inch square baking tin with baking parchment.
  2. Place the milk chocolate, dark chocolate and butter into a microwave-safe bowl. Melt slowly in the microwave in short bursts, stirring regularly until smooth. Set aside to cool slightly.
  3. In a large bowl, whisk the eggs and light brown sugar together until the mixture is pale, thick and has roughly doubled in size.
  4. Pour the cooled chocolate and butter mixture into the whisked eggs and sugar. Using a large metal spoon, carefully fold the mixture together. Be gentle – you don't want to knock out all that lovely air!
  5. Add the plain flour and cocoa powder and gently fold again until just combined.
  6. Add the chocolate chips and chopped caramelised biscuits, folding them gently through the brownie mixture.
  7. Pour the mixture into the prepared tin and spread evenly.
  8. Spoon dollops of the biscuit spread over the top of the brownie mixture. You can leave them as generous dollops or lightly swirl them through the top.
  9. Bake for approximately 30 minutes. The edges should be set but the centre should still have a little wibble-wobble when you gently move the tin – this will give you lovely fudgy brownies.
  10. Leave the brownies to cool completely in the tin, then place them in the fridge for around 1 hour to firm up before slicing.
  11. Cut into squares, serve and enjoy. Delicious!

Storage

Keep the brownies in an airtight container. They can also be frozen for up to 3 months. Allow them to defrost fully before serving.
