Chocolate, Banana & Walnut Loaf Cake Recipe

A deliciously moist banana loaf filled with milk chocolate chips and crunchy walnuts. Perfect with a cup of tea and just as lovely served warm from the oven.

Ingredients

  • 3 overripe bananas
  • 75g butter, melted
  • 100g soft light brown sugar
  • 1 medium egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • Tiny pinch of salt
  • 185g plain flour
  • 85g milk chocolate chips
  • 60g walnuts, chopped
  • A few extra chocolate chips for sprinkling on top

Method

  1. Preheat the oven to 180°C and grease and line a 2lb loaf tin.
  2. Place the bananas in a large mixing bowl and mash them with a fork. They don’t need to be perfectly smooth – a few little pieces of banana are absolutely fine.
  3. Pour in the melted butter and stir until combined.
  4. Add the soft light brown sugar, beaten egg, vanilla extract, baking soda, salt and plain flour.
  5. Gently mix everything together until just combined.
  6. Fold through the milk chocolate chips and chopped walnuts.
  7. Spoon the mixture into your prepared loaf tin and smooth the top.
  8. Sprinkle over a few extra chocolate chips.
  9. Bake for approximately 45 minutes, or until a skewer inserted into the centre comes out clean.
  10. Leave to cool slightly in the tin before transferring to a wire rack.

This loaf is delicious enjoyed warm while the chocolate is still melty, or leave it to cool completely and enjoy later.
